Hiro & Hitomi Kitaura run a small unassuming Japanese restaurant in the small town of Squamish, British Columbia. Squamish as it turns out is starting to become a hot bed for some of the best sushi in the country, and Hiro is becoming one of the most notable of chefs.
By creating melt-in-your-mouth dishes using west coast ingredients and Japanese cuisine, Kozo Sushi Café has become one of the most popular eateries in Canada's Outdoor Capital.
It was a great honour getting to know both Hiro and Hitomi in the process of making this short. I hope you enjoy it - and I highly recommend this fantastic restaurant if you're ever in the neighborhood.
